🥞 Sheet Pan Pancakes
Mornings in our house used to look like me standing over the stove flipping pancakes while everyone else waited… and waited… and asked if they were done yet.
Not anymore.
This sheet pan pancake has completely changed our mornings. I can feed my whole family of five at once, everyone gets what they want, and I’m not stuck cooking for 30 minutes straight.
This is one of those simple changes that just makes life easier.
🍽️ Why I Love This
- Feeds the whole family at once
- No standing at the stove flipping pancakes
- Easy cleanup (one pan!)
- Everyone gets their own flavor
- Perfect for busy homeschool mornings
🛒 Ingredients
- 2 cups flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 3/4 cups milk
- 1/4 cup melted butter (or oil)
- 1 tsp vanilla (optional—I’ve made it without!)
🥣 How to Make Sheet Pan Pancakes
- Preheat oven to 425°F
- Grease or line a sheet pan
- Mix dry ingredients in one bowl
- Mix wet ingredients in another
- Combine (don’t overmix—lumps are okay!)
- Pour into your sheet pan and spread evenly
🍓 Make It Fun (My Kids’ Favorite Part)
Instead of mixing everything together, I divide the pan into sections so everyone gets what they want:
- Chocolate chips
- Blueberries
- Banana slices
- Cinnamon sugar swirl
Just sprinkle toppings on top and lightly press them into the batter.
🔥 Bake
Bake for 15–18 minutes until:
- The center is set
- The top is lightly golden
Let it cool for a few minutes, then cut into squares.
🍁 Homemade Syrup (No Store Needed)
I didn’t even have vanilla, so I made a quick syrup from scratch:
- 1 cup sugar
- 1 cup water
- 1–2 tsp molasses (for color + flavor)
- 1 tbsp butter
- pinch of salt
Bring sugar and water to a boil, simmer a few minutes, then stir in the rest.
It turned into the richest, warm syrup that tasted better than store-bought.
💡 Tips From My Kitchen
- It thickens more as it cools—don’t overcook the syrup
- Press toppings in slightly so they don’t fall off
- Thicker batter = slightly longer bake time
- Cut into 8 pieces for easy portions
🧊 Make Ahead (Game Changer)
I store extra squares in the fridge and reheat them during the week.
Breakfast is basically done before the day even starts.
❤️ Real Life Note
I’m not making everything from scratch… yet. But this is one of those small steps that saves money, feeds my family well, and helps me build the kind of kitchen I’ve always wanted.
Simple. Practical. Real life.
